GRILLED SALMON SALAD
Brio Tuscan Grille Recipe

Serves 1

5 oz. salmon, marinated
5 spears asparagus, blanched and then grilled
oil (as needed)
salt and pepper mix (as needed)
2 1/2 oz. Mesclun greens
2 1/2 oz chopped greens
1 oz. tomato, diced
2 oz. balsamic dressing
3/4 oz. crispy potato strings
2 tablespoons Feta cheese

lace salmon on grill and cook to medium. Drizzle asparagus with oil; season with salt and pepper. Place asparagus on grill to cook. In a mixing bowl, combine greens, tomato and dressing. Toss to combine. Tower mixture in a cold, large, rimless bowl. Top salad with salmon. Piece asparagus together leaning on salmon. Tower crispy potato strings on top of salmon. Sprinkle tomato and Feta cheese on top of potatoes and salad
