GORGONZOLA CRUSTED STEAKS
Brio Tuscan Grille Recipe

Serves 4

Crust
4 oz. herb butter, softened, room temperature (recipe follows)
4 oz. Gorgonzola cheese
1/2 cup Panko bread crumbs

Mix all ingredients and divide into four parts. Flatten between wax paper to quarter-inch thickness. Top four grilled steaks with crust and broil for one minute.

Herb Butter
Combine the following ingredients and mix until smooth:
1/2 lb. whole, unsalted butter at room temperature
1/2 teaspoons garlic, chopped
1/2 tablespoon fresh chopped herbs (thyme, parsley, and basil)
1/2 teaspoon Kosher salt
1/4 teaspoon ground black pepper
